Si richiedono buone conoscenze dei metodi di birrificazione, forza di volontà , impegno e dedizione. Affiancamento di min. 10 gg con il birraio in carica. Il candidato dovrà occuparsi di tutte le fasi di produzione, dall'approvvigionamento delle materie prime, conduzione dell'impianto di produzione, controllo delle fermentazioni, redazione di ricette, tenuta dei registri accise, gestione confezionamento e magazzino.
