Birra Ai Cereali Con Fiocchi Di Segale/frumento/avena

ciao, mi aiutate a formulare una birra estiva ai cereali?

pensavo ad una ricetta di questo tipo:

 

Original Gravity (OG): 1.052  (°P): 12.9
Final Gravity (FG):    1.013  (°P): 3.3
Alcohol (ABV):         5.11 %
Colour (SRM):          3.3   (EBC): 6.5
Bitterness (IBU):      26.9   (Average)

58.25% Pilsner
19.42% Wheat Malt
11.65% Flaked Wheat
5.83% Flaked Oats
4.85% Flaked Rye

1.3 g/L Hallertau Tradition (5.7% Alpha) @ 90 Minutes (Boil)
0.9 g/L Saaz (3.6% Alpha) @ 15 Minutes (Boil)
1.1 g/L Saaz (3.6% Alpha) @ 5 Minutes (Boil)




Fermented at 20°C with Safbrew T-58

Notes: Fasi di ammostamento:
1° step: PROTEIN REST 52°C per 20 min.
2° step: MASH 63°C per 50 min.
3° step: MASH 68°C per 50 min.
4° step: MASH-OUT 78°C per 10 min.

secondo me se usi già  il malto di frumento diminuiscine i fiocchi ma aumenta quelli di segale
